Learn English – Lesson 82 – Allergies
There are many arguments and ideas as to why so many people are developing adverse reactions to certain types of food these days. Some suggest GM foods whilst others think it may be due to the increased use of preservatives and artificial flavourings used in the production process. Whatever the reasons may be, it is important that the public is informed of all aspects of the food making produce. It is insisted upon that companies follow labeling laws that require food products to clearly inform consumers if their products contain major allergens or by-products of major allergens as well as warning customers when food has been prepared around certain allergens that have been known to cause severe reactions.
Tree nut allergies is one of the more commonly known reactions. Tree nuts include Brazil nuts, cashews, chestnuts, hazelnuts, macadamia nuts, pecans, pistachios, pine nuts, and walnuts and although some of these nuts may not trigger an allergic reaction, those who suffer from allergies to just one or two of them are asked to avoid this nut family altogether. Foods that almost always contain tree nuts include pesto, marzipan, Nutella, baklava, pralines, nougat, and turrón. Whilst other foods may contain nuts including cereals, crackers, cookies, baked goods, chocolates, granola bars, flavoured coffee, frozen desserts, marinades and barbecue sauces. Hence, the necessity to label foods clearly and concisely.
Shellfish allergies are probably one of the most commonly known of all food allergies. Shellfish can cause severe allergic reactions (such as anaphylaxis). Therefore it is advised that people with shellfish allergies have quick access to an epinephrine auto-injector at all times. To prevent a reaction, strict avoidance of shellfish and shellfish products is essential. Always read ingredient labels to identify shellfish ingredients. In addition, avoid touching shellfish, going to the fish market, and being in an area where shellfish are being cooked. Avoid foods that contain shellfish such as Barnacle, Crab, Crawfish, Krill, Lobster, Prawns, and Shrimp.
Some of the newest kids on the block is wheat and gluten intolerance, though it should be noted that these intolerances differ from each other. Wheat allergy is most common amongst children and can usually dissipate as the child ages. Being that wheat is the predominant grain product, avoidance of products containing wheat can be quite a challenge. Although, there are many alternative grain products on the market such as amaranth, barley, corn, oat, quinoa, rice, rye, and tapioca.
A food allergy is an overreaction of the immune system to a specific food protein. Symptoms from this reaction can range from mild to severe, from rashes and swelling to wheezing and loss of consciousness. Coeliac/Celiac disease, also known as Gluten Intolerance, affects the small intestine. It is a digestive disease that can cause serious complications, including malnutrition and intestinal damage, if left untreated. Individuals with coeliac disease must avoid gluten, found in wheat, rye, barley and sometimes oats.
Should you suffer from a wheat allergy, or suspect that you do, you should avoid foods that contain wheat or ingredients such as Cereal extract, Couscous, Cracker meal, Durum, Flour (all purpose, bread, cake, durum, enriched, graham, high gluten, high protein, instant, pastry, self-rising, soft wheat, steel ground, stone ground, whole wheat), Pasta, Semolina,and Spelt.
Always remember to read ingredient labels carefully, even if you would not expect the product to contain wheat. Wheat has been found in some brands of ice cream, marinara sauce, potato chips, rice cakes, and hot dogs. And may also be found in ale, baking mixes, baked products, batter-fried foods, beer, breaded foods, breakfast cereals, candy, crackers, processed meats, salad dressings, sauces, soups, and soy sauce.

|To try||He tried moving the box but it was too heavy.|
